A Meal I Will Never Forget

When I was a teenager, I went on a mission trip to Eagle Pass, Texas to help at a Spanish Speaking Bible College named Colegio Biblica.  We were given the task of filling in a trench (that the last mission group had dug) for the foundation of a building and digging another that was almost the same, but different.  (Now that I am grown, I think the college just didn’t trust teenagers to build their foundations, so they just made up stuff for “mission trips” to do!) 

Anyway, by the end of the day, I was starving.  It had been over 100 degrees all day and digging in the rocky soil had been very physically taxing (if you know me, I’m not that hip on heat or manual labor.) At the end of the day, I took a shower in cold water, dried instantly in the very hot air, and got dressed.  I went to the outdoor kitchen to see if I could help.  The cook, who was a beautiful, Mexican woman, was making dinner.  She did not need any help, but soon served me warm, homemade tortillas that she had just taken off the grill with sliced avocados sprinkled with sea salt.  It was the most amazing meal that I had ever eaten (even though my mom was a caterer.) I’m not sure if it was because I was so hungry or because the food was so good, But I will never forget those avocado tortillas.
